2025 Lamb & Pork Sales Updates and Info!

We've finished with that hectic time of year of raising animals, and fulfilled all the orders for whole, half pigs and lamb, and 25lb pork boxes from our valued and often repeat customers!

However, what has changed from last year is that for 2025/2026 we made sure to hold back some pork and lamb from the bulk orders, so that we could make cuts available throughout the year. This gives anyone who may have missed the bulk ordering window, or doesn't have the space, to still get pork and lamb on a day by day basis.

Some things haven't changed from last year:

Our focus is to raise healthy and happy animals in a way that also benefits the land and environment.

To that end, we have learned much and have much to learn! The pigs are 100% organically fed, and rotated through our forest where they forage freely in at least ¼ acre paddocks.

The lamb are pasture-raised. The pasture is not treated with any pesticides, herbicides, or synthetic fertilizers. They are rotated daily or every other day onto a new paddock to keep their diet diverse and healthy, and as importantly to maximize the root growth, soil health and development of our pasture.

This all helps to improve soil quality, sequester carbon, increase water infiltration, and promote biodiversity of plants, insects and wildlife - supporting our local environment.

How do you sell your lamb and pork?

For the rest of 2025 and until bulk orders are available in 2026, we are selling our pork and lamb by cuts, or you can purchase pork in 25# boxes, (the 25# box will include chops, shoulder roasts, uncured belly, links and ground meat).

How do I know what size cuts of lamb and pork are available?

We are maintaining and excel based inventory of packages sizes for each of the cuts. When you contact me to order I can let you know what the current availability is, and get you the cuts that you want.

(We will move to an online sales platform in the near future... another 'old sheep dog new trick' thing.... ;)

How do you price your lamb and pork?

As per the above blackboard of prices, the proces are per pound for the cuts. Once you have chosen your cuts and their sizes, I will add the totals and let you know. All the packets come with the weights on from the processor, so you will know for sure that you get what we discussed.

What will the packaging be?

Vacuum sealed and labelled meeting all USDA processing and packaging requirements.

Do I collect it or do you bring it to me?

If you are in Morganton, we travel into town often enough that we can arrange a mutually convenient time to drop it to you. If you are outside Morganton, and by that we mean the within roughly the Asheville/ Boone/ Charlotte region, we will discuss when you call us about an order, whether we can deliver and if so what the surcharge for fuel and time will be. We'll be absolutely transparent with you on delivery costs.

Of course we can make ourselves available for you to collect from us at the farm as well.

Will the bacon be cured or smoked?

No. Pork belly doesn't need to be cured to be delicious. However, we will share information on how to home cure- it's incredibly easy and better than anything you'll get in the grocery store.
